Clams Casino, Wellfleet-style


  • 2 Tbsp. shallots, minced
  • 1 clove garlic, finely minced
  • 2 Tbsp. olive oil
  • 3 slices bacon*
  • 1 Tbsp. parsley, chopped
  • 2/3 c. fine bread crumbs made from homemade-style white bread
  • 2 Tbsp. freshly squeezed lemon juice
  • 3 dozen littleneck clams
  • freshly ground pepperĀ

To Prepare:

  1. Melt butter and olive oil in pan under medium heat. Add garlic and sauté until lightly golden. Then add the shallots and sauté until translucent.
  2. Off the head, blend together the garlic and shallot mixture with the breadcrumbs and parsley. Season with ground pepper.
  3. Open the clams. Put them in a pan atop crumpled aluminum foil or rock salt. Top each clam with a dab the breadcrumb mixture and a small piece of bacon.
  4. Place under the preheated broiler and broil for a few minutes until the bacon is well-browned.
  5. Voilà! Serve with a twist of freshly squeezed lemon juice.

Freshly chopped herbs, such as basil, can be mixed into the breadcrumbs, substituted for bacon. Top with a small slice of butter and broil a few minutes until lightly browned.
